- Boil 3 cups of water. Add mint leaves and shahi jeera. Simmer for 2 minutes.
- Remove from heat and allow to cool for 30 minutes and then strain.
- Mix the orange juice into the cooled water.
- Wash and soak basmati rice for 15 mins.
- Heat ghee in a kadai. Add cloves, cinnamon, and onions. Fry until golden brown.
- Add chilli powder and mix. Add water and orange juice mix measuring 4½ cups (adding water as needed to get the measurement)
- Bring to a boil. Add rice, salt, and orange essence. Simmer until the rice is perfectly cooked.
- Cut paneer into long strips and fry in oil until slightly brown. Garnish on top of the rice.
- Serve hot with curds raitha.
