- Take as required Coriander leaves
- Prepare 1.5 cup water
- Get to taste Salt
Steps to make Potful Mexican Rice:
- Clean and soak 1 cup of rice into water for 15-20 min
- Prepare tomato puree (grill tomato and then make puree from it by removing it's skin)
- Boil Rajma and sweet corn keep aside
- Heat a pan add oil. Once oil is hot add onion, garlic paste fry it until it cooks completely.
- Add finely chopped bell peppers (green, yellow and red), green pease and mix it well.
- Add Tomato puree, red chilli powder, jeera powder, oregano, chilli flakes, tomato ketchup and mix all ingredients.
- Now add soaked rice for 1 cup of rice add 1.5 cup of water. Mix it well and close the lid for 5-8 minutes.
- Now open the lid add boiled rajma, sweet corn, jalapeno, Coriander and salt to taste. Close the lid again and let it cook until rice cooks completely.
- Now switch off the gas add 1/4th cup of cheese to it and mix it well.
- While serving add remaining cheese on it. And have the yummiest spicy Mexican Rice
