This sweet and spicy version is my favorite though. Just make sure the chickpeas are nice and crunchy when you remove them from the oven. Otherwise they tend to go a little soft when they've. It's sweet, spicy, sour and savory.
Instructions to make Crunchy-Sweet-Spicy:
- Marinate the pork loins in a mixture of soy sauce+BBQ sauce+sweet chilli sauce+Paprika+Oregano+Honey for 5-10mins
- In the meantime, Boil water for rice and prep the vegetables and zest and juice the lemon. Mix the lemon juice and zest with the rice and simmer on a medium heat for 15-20 mins
- Shallow fry the pork loin and cook in the oven @ 200’c for 15 mins
- Toss the prepped veg in soy sauce and fry in hot sesame oil for 5 mins. Add in the cooked rice; Stir and simmer for 3-5mins. Season
The main difference is the use of cilantro in the Thai version. Unlike other pickled jalapenos, these jalapenos are crunchy and fresh tasting, even after one month. The combination of sweet and spicy in the popcorn is what makes it different from anything else you've tasted. Soooo easy, soooo crunchy, not too sweet and perfectly spicy…You should win an award for this one. The only nuts I had on hand were raw almonds and they just don't have that crunch.
