Cauliflower and tofu is roasted in the oven with mild seasoning of Indian spices transforming a simple curry into an exotic. - Chop the cauliflower, pepper, tofu in big pieces, Clean the mange tout. Put the oven on 180degrees.
- Put up rice (brown rice is my favourite - takes 30-45 min to cook depending on the rice you use)
- Add everything in a baketray and add 1 table spoon of coconut oil and the curry powder + turmeric + salt & pepper. Hustle and put in the oven for 25 min
- Add 0.5 table spoon oil in a deep pan, and fry the coriander seed + cumin seeds.
- After 2 minutes (and the seeds begin to pop) add cut onion + garlic (in small pieces).
- After 5-10 minutes (when onion is soft) add the coconut milk and put on low heat. Wait 10-15 minutes, then check the oven, if the veggies + tofu are well baked (soft/crispy on the outside) add them in the pan and cook together for 5 more minutes
- Drain the rice and serve all together - bon appetite :)
- Add fresh cut coriander (as in the picture) as finishing touch !
